Ash and I are on our own this weekend, so we did what any lonely girls do. We baked, of course!
After checking out some other foodie blogs, we found an awesome recipe for zucchini bread. It was far from sugar free, but hey, it had vegetables in it! This recipe came from Liz at Hoosier Homemade.
- 3 eggs
- 1 cup white sugar
- 1 cup brown sugar
- 1 cup oil
- 1 teaspoon vanilla
- 1 teaspoon cinnamon
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1/4 teaspoon baking powder
- 3 cups flour
- 2 cups zucchini, grated
- 1 cup nuts, chopped
Beat the eggs until foamy. Add the oil, sugars and vanilla and mix well. Add the dry ingredients except the flour.
Time for the zucchini.......
and flour. Then we folded in the nuts.
350 degrees and about 40 minutes later....and.....we have bread!
Ash was our taste tester and she just wasn't quite sure if she liked them or not, so, she ate three!

Well, the taste tester is all smiles, so they must be good! I like how you’ve taken ‘stage’ photos – it almost seems like a mini movie. I hope you and Ash have a good time in the kitchen together. It’s great that you cook together. Kids that cook and eat with their families generally do better in school and are healthier than kids that don’t. They also learn life skills, such as communication and measuring.
