Spinach Artichoke Pasta

Spinach Artichoke Pasta



12 oz whole wheat egg noodles
1 12 oz jar oil-packed artichoke hearts, drained – reserve 1 Tbsp oil
6 oil-packed sun dried tomatoes, drained – reserve 1 Tbsp oil
2/3 cup white wine (or vegetable broth)
6 cups spinach
4 large cloves garlic
8 oz low-fat ricotta
½ cup Parmesan
Salt and pepper

Coarsely chop the artichoke hearts and sun dried tomatoes. Chop the spinach and finely mince the garlic. I used a small processor for the garlic. Cook and drain pasta, retain about ½ cup of the liquid.

Cook artichoke hearts and sun dried tomatoes 3 minutes Add garlic, salt and pepper, cook 2 more minutes. Add wine, cook until it has evaporated, about 3 minutes.

Add spinach and cook until wilted about 3 – 4 minutes. Add parmesan and retained pasta water, stir a few times and remove from heat. Stir in the ricotta. Top with parmesan.



Myth Busting

The Myth:
It's too expensive to eat fresh, healthy foods on a tight budget.

The Bust:
This meal easily feeds a family of four. Although it is a bit more expensive due to some of the pricier ingredients, here it is compared to a cheap junk food meal.

1 Quarter Pounder Meal - $5.49

Total cost approximately $17.86


This meal was packed with fresh ingredients, took less than 30 minutes to cook and I had leftover spinach, tomatoes, ricotta and Parmesan to use in another meal!

That looks delicious! I am finding that it is much easier to eat healthy at home cheaply than I thought it was when I first started out. Not only is it cheaper, but it tastes better.

Nice! If you made the noodles and dried the tomatoes from last summer that would bring this dish down even further. Ricotta is also easy to make but doesn't save you as much money as the first two will. Thanks for linking up to simple lives thursday!

When we hit Mickey D's, we order from the dollar menu - I can feed 5 of us for $15. However, it's not nearly as yummy as good old home cooking, that's for sure! Love your pasta!
