Peachy Pomegranate French Toast


I checked out a new blog today and got inspired by a French Toast recipe I found. Trina, over at Trina Of The Beans made a great looking French Toast with orange zest and juice. I looked around my kitchen and saw some peaches that were going to be dead soon and I recently received some POM Wonderful pomegranate juice to try out, so......Peachy Pomegranate French Toast it is.......


3 eggs
1 peach (I had a white peach)
½ cup milk
¼ cup POM Wonderful Pomegranate juice
1 1/2 tsp cinnamon
6 – 8 pieces of bread (I used whole grain + flax seed)

Chop, then smash the peach and add the cinnamon, stir and set aside. Adding the cinnamon to the peaches keeps it from separating in the milk later.


Whisk together the eggs, milk and pomegranate juice. Add the peach mixture. Dunk the bread into the mixture and make sure it gets coated with the peaches.

Cook on a hot griddle or pan until both sides are golden brown, about 2 -3 minutes per side. I used a non-stick spray on my pan. You can use butter or oil if preferred.

Looks like a great breakfast to me. I love cinnamon and pomegranate juice adds a lot to the pancakes.
